It's useful if you get enough people for at least a 4v4 skirmish, or even a full-out 8v8 battle. Just make sure you'll be doing stuff that you may see in a real GvG (splitting, spikes, flagpushes, etc.)

Gets the team more coordinated. You'll know how to handle certain splits. You'll know when to split and what to split if you see going 8v8 is getting nothing done. Get ready to increase your battlefield awareness. For frontline, practice not dying in frenzy, using skills wisely, calling targets, quarterknocking/stepping. For backline, watching what to prot, following damage on splits, knowing the most important hexes/skills. For rangers, learning how to split, poison entire other team, interrupt. Mesmers, knowing what to interrupt and when to do it. Eles, what to snare and when to split. Flaggers, how to pick up a flag and run it to the stand while shouting "PROT ME MONKS OR ELSE I'M GOING TO DIE" even though no one's in range of you. It works, and in the off-chance that you die, you can make the monks feel really guilty for not being able to keep you alive

You could practice ganking, 1 monk vs 2 melee. But in real combat, you will have help from backline, Cripshot ranger, mesmers and other monk...

Anyways in scrims you should be practicing things that should be happening in a real GvG get those aspects down, and then start trying all the other things that hardly happen and or things you hardly try and do in a ladder GvG.

Things that possible might happen:
3vs3: Warrior, Ranger, Ritu/Monk vs Warrior, Ranger, Ritu/Monk
1vs1: Ranger vs Ritu
1vs1: Ranger vs Ranger
2vs1: Warrior, Ranger vs Ritu
3vs2: Warrior, Ranger, Ritu/Monk vs Waterele/Monk, Monk/Ritu
Or you can try to play with a split from your balanced team against a dedicated splitteam.
But in ladder gvg things will happen you can't practise in scrimmages, it's just experience how to outplay some splits (and of course it doesn't work every time)

I've found skirmish only really useful when testing gank characters or flaggers, i.e. evaluating the survivability of characters that are expected to solo often. Otherwise, you only really learn GvG stuff from actual GvG.
